Kids have been priced out of the hobby for the most part and it's adults who are collecting "sealed" as an investment, or ripping for hits to "grade" as an investment, and scalpers who want to make a quick profit along the way.
All the investors don't mind paying because they believe that they will make a profit in the long term. The only way it'll go sour now is if people start to lose interest and having huge sell offs, which doesn't seem to be happening any time soon

Not to say that they didn't go wild, but when you're only getting enough allowance to buy a pack or two, you aren't grabbing everything you can. Keep in mind that these are also mostly ~16-years-old, again different from the main millennial pokémania cohort that were around 9-12 when pokémon was really big. Then in the mid-era generations, like DP, BW, XY and even SM, Pokémon wasn't popular enough for people to chimp out over stock, it was always plentiful.
