Yes, it would be a refreshing take on the series (which save for PLA is always set in the same near-futuristic setting).
I can see Pokéballs being replaced with Poké-lassos, and battles replaced with standoffs, etc

What if you could steal other people's pokemon? But like, because they have been infected with some kind of darkness that only you can see and cure. Would be pretty cool.

That reminds me of the catching mechanic in the Pokemon Ranger games, which made me almost destroy the NDS touch screen because I was a dumbass kid. At least now there should be better ways of doing it, unless they will make you rotate the stick and eventually cause it to break/drift.

Obviously bait but there's a ton of different wild west towns like oil/gold mining, farms, pass-through towns, huge olden-day cities, towns around bridge, etc.

To be honest, it doesn't all have to be deserts.

RDR2 is a western game and it isn't entirely deserts and boring towns. It's got forests, valleys, mountains.
