Anabel was able to telepathically communicate with Pokemon. But I don't think the anime ever had a psychic anywhere close to as strong as Sabrina. I can't really think of another psychic human in the franchise as a whole that's on par with her

Psychics are regular trainer classes too, I guess they don't do anything besides levitate Pokeballs because it's not like there's ever been a point where there's been an important psychic doing cool Mob Psycho 100 stuff.

There really isn’t any human close to this. She could probably solo a good number of strong Pokemon species

This. Pyschic powers in the Anime have become incredibly mundane since the Sabrina episode. Sabrina was pulling off some insane shit in the Anime. Early Anime was crazy. Not even Aura users compare to her.
