Playing Heartgold for the first time. I didn't want to do a Nuzlocke, but I kinda want to use shitty Pokémon to keep it interesting. Any suggestions or restrictions?

raticate with guts destroys morty as long as you pre-burn or poison, literally he cant hit you with any ghost moves or hypno you to use dream eater. only move he can use on you is sucker punch lel

only Johto mons is simple. That mean no evolving Pokémon like Aipom and Piloswine. Swap out your starter as well for a bit more challenge.
Cyndaquil -> Trade Slugma
Totodile -> Wooper or if you want to wait a lesser used pokemon like Remoraid or Corsola
Chikorita -> Hoppip, or be a madman and go for Sunkern.
