Honestly I'd probably like it better if it had a snout and was a bipedal anubis/jackal monster. The current mouth just makes it look like someone wearing a fursuit.

This. It’s pretty common not to model creatures with snouts with their mouths going fully around the snout or making the bottom part of the jaw flat. That’s because it’s far easier to emote them if they have human like mouths than if they had a different type of mouths

That is exactly my point. Pokémon are seen through a cartoon filter (some more than others, I admit). Lucario has a snout, it's just simplified into a Sonic face most of the time.
