Volo doesn't need to be immortal. He knows how to access the Distortion World. Time doesn't pass there while it flows normally in the main world.

This also means the events of nu-Platinum hasn't happened yet. Cyrus is still at large.

You guys forget that he's Celestica. They may have much longer lifespans than normal humans. Look at Cogita - she is clearly Volo's ancestor, but she is never referred to as such. No "mother" or "grandmother" or "aunt" or anything. He just calls her "mistress", which she didn't like. That could imply that she's much older than a grandmother would be. She also lives in the "Ancient Retreat", all alone. If it's ancient, it has been there for a very long time.
And then there's also pic related. So yes, Volo could definitely still be alive, perhaps even barely aged.
