It's just one of the many contradictions in canon, as unfortunately for this franchise, there's plenty of those. It's mostly the result of several aspects relating to Pokémon being a huge several decades-long multimedia franchise.
Here is a general idea on how to handle such contradictions. Just two questions. First, does the thing contradict more important parts of the franchise and/or the themes/morals of the franchise? If yes, then second, are the most likely reasons for that being the case good reasons? Then, if no to the second, it's best to treat it as not canon.
Humans eating Pokémon goes against the general ideas of the franchise, and is mostly brought up at all in the series for stupid reasons. So it doesn't deserve to be treated seriously. Like with some of the food that's meat being shown in Camp in gen 8 and Picnics in gen 9, they just didn't want to bother to remember not including meat for every new food they made for that new game mechanic. Another thing being Pokédex Entries, which even beyond this have many issues with them. You'll notice that the idea of humans eating Pokémon is being brought up less and less as the franchise goes on. Whereas, conversely, as the franchise goes on, Pokémon are shown more and more with human-level cognition at minimum, all Pokémon.
