Vivillon's forms in the 3DS games depended on the OT's region in the 3DS system settings. The Switch's region options were greatly reduced compared to 3DS, so this change was kind of inevitable and was resolved by moving it to GO + PokéTransfer while the Switch games are locked to a certain form.
In SV, the default is Fancy, but can be temporarily changed with GO + Mystery Gift. In ZA, all wild Vivillon are Meadow except for the sidequest gift which is Marine, referencing the two forms for France in the 3DS games.
