The games have built in difficulty options that people choose to disregard.
You can choose to solo level 1 Pokemon and basically steam roll the game, or you can train a diverse team to have more of a challenge along with having more thought put into battles.
You can choose to use NFE pokemon, and doing so even has the benefit of providing moves you otherwise might not have for awhile. Lower stats force you into more carefully considering your moves instead of just being able to press A to win.
HMs (for most? of the series) are mandatory. They are usually not so great moves that you have to sacrifice a move slot for to traverse the overworld (balancing the purpose of your pokemon with battles and world exploration). This forces you to more carefully consider what moves are used for each Pokemon.
You can choose whether or not to use healing items or not. You could spam full restores, or you could limit yourself to just using healing moves.
You are able to make a conscious choice whether or not you want to play the game on baby easy mode or not.

All of this is INTENTIONALLY designed for you to consider as you play the game. Choosing to use a team of pseudo legendaries and complaining that the games are too easy is your problem. This isn't arbitrary self restriction like a nuzlocke--this are design choices that the game flat out has NPCs tell you.
