Having a non linear progression means team building opens up like fucking crazy, you can effectively have nearly any team member at nearly any point, no longer having to worry about bullshit like Larvitar's and Houndour's and Misdreavus' being locked to post game. Instead the whole game opens up, and you can engage with progression at your leisure.
Also, technically, even without level scaling SV allows for more challenge than previously possible for the campaign. Since Pokemon games are so braindead easy, virtually all fights amount to just mashing A though them -- now in SV, doing them in any order means you can still at least experience some small degree of challenge if you choose to fight later gym leaders earlier.
A lopsided experience, but not much of a loss for the later fights of "early" gym leaders, since you'll be one shotting them regardless. But in the end, its still a net gain.
