It's not all gone, one of Dragonite's best sets is tera Normal Extreme Speed spam. Otherwise yes, Normal monsters aren't really at the forefront anymore, though that's mostly because the OP monsters, namely current legendaries and paradox, don't have the type. It's not so much the type itself, if they actually made a broken Normal monster on par with what's strongest at the moment, it'd be used.

I've seen it on Flutter Mane and Gholdengo to deal with each other and other Ghost types, other than that I'm not sure.

pretty much every physical attacker with espeed does it (entei, lucario, both arcanine) as well as boombursters like toxtricity and noivern. in theory normal certainly has the tools to be good, it's only let down by gamefreak making every normal type either have shit stats or no access to the good moves.
