Countries that have all had their natural landscapes utterly ravaged by thousands of years of human development and war don't really inspire for the games themselves, so for every European region you just get a bunch of Mario levels stuck together randomly and some over the top fantasy version of an iconic building or town from that country.
For the japanese regions they approached them with a less touristy mindset and a local knowledge of what makes the areas special, and that was reflected in the games and you get that lived-in quality. SEA is obviously being approached with that same tourist mindset, but when you go to SEA as a tourist, you're usually going for the nature and scenery, things that will naturally inspire elements of a pokemon region, while in Europe you go to see iconic cities and buildings, which doesnt lend itself to getting inspired for pokemon habitats, and also makes the regions feel like more of a stereotype of the real-world location rather than something more lived in.
Basically:
