You start with the Kanto starters and they are story related, while the others aren't and are optional. You can beat the game without them.

Scorbunny and Sprigatito are more forced upon you in the story but Cinderace and Meowscarada? Play no part at all, only recruited if you choose to recruit them and even then they're as important as the random Mareep you recruit in Bleak Beach then forget about for the entire chapter

Ignoring Kanto darlings for obvious reasons, Rotom, Piplup and Tinkaton are story-mandatory mons, dummy.
Rotom has a unique function no other mon has, Piplup is proposed as your very first option to help cleanse muddy tiles, and Tinkaton is literally the most useful mon for all building projects.
