They're mostly short-sighted and curious because of your electromagnetic signals, and they don't have hands so they "feel" with their mouth, and if they bite into you and you bleed, well yeah they think you're edible so of course they'll attack at that point. The trick with them is not to panic, not to make erratic movements, stand your ground, hold out your hand and push their head/nose down from the top while making eye contact if they approach. Similarly, if they are coming towards you from below, not panicking and using your flippers to push at it's nose. It'll get the message that you're a predator too and avoid you. Then keep your eye on them till they swim away because of the possibility of them doing a double check. If there's more than one shark, repeat the process like you're Mario stomping on goombas in sequence.
I'd have to assume you'd be diving or snorkling, if you're in open ocean with a shark without a way of seeing them approach you're not in a good spot, in which case you'll have to do it while your eyes sting from the saltwater and then try to find something you can swim onto like floatsam or an island.
