You're sadly (both for me and for you) talking to someone who played a lot of Ubi open worlds and I can very confidently say their and Zelda's open world and open world quest design is not similar at all, aside from both having towers. Simply put Ubi open worlds are pretty, but there's not much to do or explore, they're empty, meanwhile Botw is a sandbox with a lot of organic puzzles scattered around the map.

Or that co-op Zeldas (Four Swords and Tri Force Heroes) are spin-offs because the rest of the series is single player. But we don't simply because Nintendo never calls them that. What is and isn't and official/defined spin-off is more often than not just a matter of marketing really.
