Korone, Subaru, Luna, and Botan are special in that regard because they're willing to try all sorts of random shit. I'm sure there's others I'm forgetting, but the point is that it's not every Hololive member that plays the same stuff. It's just commonly what you see because they all hop on the bandwagon with certain games and you end up seeing it 5+ times.
