It's probably the result of one of the various perspective and lighting tricks that are used when converting anime to 3D. Anime actually can't exist in 3D because it doesn't make spatial sense, so you have to fake it. The model that you have to make to work around this is a hellspawn that looks nothing like a human, and the lighting makes it pretty.
I'm betting the cause of Mori's flat face is something like pic related, which is done to ensure that the entire face is illuminated at all times. It's possible that we were never meant to see the face from that angle.
