First I pat-dry it with some paper towels to help the spices stick. Then I season both sides with salt, pepper, garlic powder, and onion powder. I cheat and use a few drops of liquid smoke and worcestershire for smell and color. During spicing, I melt 3ish tablespoons of butter in the cast iron.
2 minutes on each side, spooning the butter over it constantly. Move to a cutting board, pour some of the leavings over it, then loosely tent with foil for 5 minutes. You'll get a feel for the times based on thickness, but this tends to work for an inch thick or so
