As for fan games, I have no clue. I somewhat doubt that big corpo vtubers especially JP ones would bother with the grey area fan games occupy, you'd have to search among indies for those.
Would be interesting to see streamed though, I've seen some really phenomenal complicated danmakufu shit on YT, and considering it's all done in basically C and engine specific things (unless they build their own game engine) its pretty impressive
