It's the opposite of Dark Souls, instead of going to the enemy during openings, you're really slow so you let them come to you and try to time your attacks just right to hit weak points. It's more like bullfighting than pure action R1 spam, and you can typically block or just carefully step out of their hitbox rather than spamming dodge. The windup on more powerful attacks or landing the final hit of a combo are the main meat of the game, since you gotta make sure those land on the right spot to cut the tail or stun the head.
