IV is the definitive Final Fantasy experience. You can play the original or the remake, and both are solid options.
After that, VI is always considered a top-tier game. V is experimental for the time, but pretty fucking good as well. If you're looking for a more modern entry point, the games get pretty fucking different between each one so it's hard to recommend one without knowing your taste. If you want a good spinoff, Tactics is always held up as one of the best in the series, even compared to mainline games.
