I cut 2-3 chicken breasts into chunks, put them in a bowl, and pour buttermilk and pickle juice over them (about 250 ml or half of the cup, and half of that of pickle juice). Add 1 teaspoon of salt, white pepper (or black if you don't have any), paprika, garlic powder, and optionally onion powder or whatever spices you want to add. stir it around, cover it up, and let it brine overnight. You can go longer, but not longer than 24 hours, or else it gets mushy.
For the breading, I use 100 g of flour, 1 teaspoon of baking powder, 50 g of cornstarch, and the same spices. When you bread, make sure to really press it down several times so it goes into every nook and cranny. (this is the most time consuming part)
Also, I use tongs to put the chicken in the breading so my hands don't get sticky and clumpy. I also use the tongs to put it in the fryer, and I fry without the basket because the breading tends to stick to it, and it's really annoying to clean. should feed about 3-4 people.
