I highly recommend starting with the original Persona first and playing in release order, since the gameplay evolved a lot over time
Personally I liked 2 a lot, it even has
Adolf Hitler, some of the spin-offs are pretty good too like the Persona 3/4 crossover game that's an Etrian Odyssey clone
Also a fun fact, in later versions of Persona 1 they made the character Mark black for absolutely no reason
