On youtube, you need to schedule all your streams beforehand as well as adding tags, thumbnails, descriptions, etc.
Sign in to the restream service through OBS and then a few panels will pop up, one of them is restream channels, click the three dots on your connected youtube channel and select "Edit Settings" under event you select one of your scheduled streams, select whichever you want to start and click save, don't do anything else.
For twitch, I suggest you edit settings in your stream manager page, the restream plugin will automatically update itself when you make changes to your twitch page.
For chat, I suggest you add custom browser docks, one for youtube livechat and the other for twitch, on youtube you'll have to manually update the URL with the current livestream's chat url, these always change, is not like twitch which only has a single url that never changes.
