Go for thickness. Wide hips, large breasts, hell, a bit of a softer, squishier stomach can do fucking wonders and isn't something that many people manage to hit right(if you're going for mass appeal, though, don't overdo it).
Long, flowing hair is a high point for attractive maturity.
If you want to hammer in the maturity, don't be afraid to have a couple of light face lines. They'll make the design stand out more than the average perfectly smooth-faced anime girl and don't look too bad to anyone looking for a sexy, mature woman.
