Anime's just the most popular one because it's an appealing style that's easy for most viewers to get into. But there's indies out there like PumpkinPotion with a full-on black and white model emulating old cartoons. One of the Holostars had a very Western comic-styled model in his PL, Captain Crabs looks more like clipart of a crab than a vtuber model, AjonDC is a claymation styled model and hell even Pikamee has an artstyle that, while still anime, isn't the same traditional kind that 90% of vtubers employ.
