why wash it unless it's gross? cast iron should soak up whatever you cooked in it...I clean my cast iron by using it. if something super greasy was in there I'll use soap + kosher salt to keep it from going rancid...>and taking a steak out of the fridge 30 minutes before cooking brings it to room temp as well.Steak doesn't make it into the fridge. If it's ground beef, and I did not grind it myself, medium well or well done because fuck getting sick. There are only a few burger places I'll order medium at other than grilling with my parents after using their grinder.
