Mince pies are thick and buttery and her pastry looks lovely. It's not dough, it's pastry, and if you don't make it by hand for these it will turn out horribly shit. A food processor works if you're doing bakerygrade shit but home-crumbled is always 1000 times better.
She put too much filling in them which is why they burst but since they're home cooked and for family and likely a matter of taste I think that's fine.
She's definitely a competent baker and does own a mixer, just not a stand one, a handheld.
I wish she'd post more stuff though, it's nice we share a hobby.
