And yes saying pH high enough was my mistake, I should have said low enough due to the levels ranging between 4.1-4.7
Feel free to correct me but the only evidence I've found about using acid to denature liver enzymes says that 4.1-4.7 should denature them in a similar manner to heat treatment over prolonged exposure.
My uni paper proving I'm special only gave me a forked tongue, not intricate knowledge of chemistry sadly...
