>>23634505This is a rabbit hole that I'd rather not get into but properly dark roasted coffee does extract more volatile volatile compounds on average than medium or light roasts. This isn't good or bad because there are so many extra variables in coffee extraction, but it's not a stretch to say that darker roasts do technically have a stronger flavor than lighter roasts. Stronger does not mean more distinct, which is what you get with medium and light, but just that there are more flavorful molecules present. But even then the argument kinda goes out the window when you start talking about espresso and not drip or immersion brewing. Espresso puts the water in contact with the coffee for such a small amount of time that the worst parts of darker roasts are mitigated compared to other brewing methods, allowing more depth of flavor from darker roasted beans (albiet at the cost of less overall coffee).
>>23634863IDK most people who care about cooking I'd hope, you can get the breville all in one unit that everyone has for like $600 and that can make fantastic espresso just like any other machine. Not everyone will have a Decent DE1 obviously but especially for cooking and non analytical brewing for drinks a midrange machine is plenty fine.
