The official and more widely used map would be the Mercator projection more people are used to and familiar with obviously, the unfolded pic would just be a handy reference.
I would suggest going for an Earth sized world to make other aspects of autistic scientific worldbuilding easier, if not maybe smaller, a lot of those countries are pretty big.
