HimeHina are the best. They make extremely impressive 3D music videos for everything, good dance choreography, interesting style, so on. Basically what I would consider to be a gold standard for what vtubers can do if any of them get serious about music.

UUUUUUUNot to my tastes but I know Froot and OBKatieKat do metal covers so they probably have some original songs too.
Numi makes a lot original songs as well.
