So with those things in mind my theory is Kinda along the same lines. Danny wouldn't intentionally conjured alcohol because he is scared of Jack in that state. He knows what monsters it brings out. Remember the scene. Lloyd was serving Jack alcohol. At this point we have confirmation that the Hotel, probably due to Danny's presence, is able to physically harm, given that it hurt Danny's neck with the dead lady. It probably having basically enslaved Jack by making him give into all his demons, used the same ability to manifest actual alcohol that Jack drunk, given that Wendy smelled it on him.

The only alternative is Wendy's perception at that point was also being warped by the Overlook because we had seen it could influence people without or with only a little Shine very easily, but I think it conjured the alcohol myself tbhdesu
