what you need to understand is that leaving your beans overnight makes them soft enough to cook but not soggy, and is an important step that many people skip
just put them in cold water the night before, then strain them, wash and cook with new water. DO NOT use the old water, it has all the impurities of the beans and will make it taste funny or too iron-y if you are cooking lentils
