vtubing is so fucking niche that you can't really discuss it irl unlike RealityTV. IMO, most viewers are lonely people (no connections, or their friends are too dull). For them, a vtuber is a gateway to something they haven't seen or experienced, then parasocial elements happen, and they start to share good and bad times of their oshi.
I might be projecting, but the moment you satisfy this need by getting into a circle of friends of your level where you can hang out, the craving towards vtubing ends. It's similar to self-insert media: when your life is getting better and more interesting, you can't really detach yourself and enjoy the media.
