An individual pulp can function as any "organ tissue" a fruit needs and this includes their brain, lungs and eyes. Since we can see that knifed fruits are "dead", we can deduce that their pulp needs to be in contact with each other in order to survive. Blending fruit really quickly doesn't separate one pulp unit from the rest but knifing does. The scream you hear when a fruit gets knifed is probably their pulp screaming and frantically trying to reconnect with the other half.
