She's the main reason I started learning the language and I always watch her week-day streams and OhaSuba. Not a lot of people stay for SC readings so I feel like they are missing out on a lot of stuff she doesn't really bring much attention towards but in my opinion that's the best part of watching her, she builds a connection with her audience that way, lets you participate in her life.
I've been posting about her on /jp/ for about a year now, if there's a stream I usually post about it still, like if there's something interesting she's saying. I remember someone called me a stalker because I posted things from her streams. Subaru definitely had some interesting discussion going on back last summer, before the "GFE" term became popular there were talks about how she's too good to be real and it's comforting that you can't be with her either way, you can definitely find those posts in archives, it was pretty funny. Back when we didn't have that much cynicism and could discuss it without buzzwords and numbers.
The only thing I can't realistically follow are her weekend game streams because of my time zone and I want to play some of those games myself before watching her playthroughs anyway. Doesn't feel right but that's life. And still too poor to maintain active membership.
