I worked at a mid-priced "sushi buffet" place in the US. We took the un-eaten makizushi from lunch, tempura fried them, slathered them in sauce, chilled them after, and put them out for dinner. I honestly thought it was just a clever (if horrible) cost-saving reuse of still-pretty-fresh food, but that it couldn't be too common.
Lo and behold Google Images immediately found me something that looks almost exactly like what we did.
