The reason why the "black people love chicken" joke is in poor taste is because historically chicken was the cheapest meat that poor people-mainly black folks- could afford. Racists decided to point and laugh at how often black people ate chicken, purposefully putting applying a negative connotation to black people and chicken.
Of course, Enna doesn't know this, most people don't even know this. The average person probably thinks it was a funny injoke within the black community, like saying hispanics live off of DBZ and Saint Seiya.
I really don't think Enna was intending to be edgy, I really think she tried to make a silly cultural class joke not understanding all the baggage it carries.
Like, you're never properly taught at school how systemic racism works. They show you the most obvious examples of cartoonishly bad individuals doing shitty racist things to other individuals. So people on twitter and tik tok grow up thinking you're either "racist and malicious" or "non-racist and good". No one stops to think that it's possible to be a good person AND still slip up and make a racist remarks due to naivety.
