DS1 will be an interesting experience not just because of the massive gameplay differences going from the most recent entry back to one of the earliest, but because its design philosophy comes from a time when secrets in games were actually secrets, and thus there's a ton of random shit that's extremely obtuse and easy to miss that are way more involved and game-spanning than "go here to see x/fight y boss" (the Solaire quest as mentioned above probably being the most egregious example, but I'm sure people will also try to convince her to hold off on fighting Sif until after the DLC content, which requires an obtuse quest in itself). But the game is also super old and famous so everybody already knows everything there is to know about it. Basically, there's going to be a lot of backseating, but a lot of it is kind of necessary otherwise she'll be missing out on content (backtracking to the Asylum unlocking the Painted World and making the second half of Blighttown tolerable), but there's also stuff that isn't really necessary but people will be screaming about anyway (the Master Key letting you skip Capra, the entire Depths, and the first half of Blighttown)
All this to say, we should convince her to take the Pendant as her starting gift.
