The only thing established is that /meat/ has multiple languages:

I imagine it might be similar to Norse in that surnames are basically just parent name+offspring affix, which basically changes every generation. People with unremarkable parentage might drop that part entirely.
That said, I imagine that /meat/ likely has something like Roman Cognomen or Chinese courtesy name, in that people who get inducted into the cult or otherwise made their name get a (Nahuatl) nickname that is used for most non-intimate social interaction.
