Also using the mentioned Aspergillus oryzae starter compound would adjust the Ph level high enough that it would cause the liver enzymes to denature over the course of a few days. Assuming this compound was added prior to the introduction of glucose (while still in the putrefaction process) the impact on overall ethyl alcohol production would be minimized.
