Yeah, plane + texturing can look like shit for anime models. Using a vroid base for monkey will probably not work, yeah.
You probably want to make eye sockets and make the eyes not just a texture as I think you are making it due to the texture you posted.
I'll send you a timelapse of someone making chuuba models, I never checked fully how he makes them but it should include texturing
