You actually DON'T need a village to begin with. Instead you should focus on making a single, large structure.
On the inside, a good way to organize villagers is like this. It's not pretty, but it's a basic skeleton you can get creative with. separating them into stalls, making multiple floors and organizing them by jobs, creating signage, all of these are massive improvements to be made. Villagers are actually not hard to micromanage since they pathfind to their jobsite block on their own, so this is very do-able as long as they're all in a structure, preferably with gates/iron doors so they can't escape.
