The tomatoes they have out in the store produce section are not actually ripe even if they are red because they are exposed to ethylene gas which turns them red to give the appearance of ripeness before they're actually ripe. Actual ripe tomatoes are delicious even raw but are too soft and mushy to be transported whole for display like, so instead they are peeled and canned and they can be found in the cans in the canned goods aisle usually.
