Only ones who don't now are ERB and Raora (they'll get them eventually for sure). How much they actually show up or are used varies greatly by streamer, but it's almost always far less than the fan mascot. I'm guessing having them's a company-mandated thing.
I agree the bunny thing is kinda dumb, but that might just be that it's introduction wasn't the best, especially with no rigging. We'll see how it goes from here on. It could have some interesting potential as a world-destroyer masquerading as a cute mascot. Or just a poor mascot with no powers who just wants to be cute and get hugged but has to deal with Biboo constantly claiming it's some monstrous entity with BS chuuni powers.
