Sup Nerissa, I dont know anything about baking but I do know about panettone, and the most crucial ingredient is the lievito madre apparently. Which is why I don't recommend making it at home. Lievito madre is like sourdough starter but you have to modify it to get rid of the acidity. This is how they do it. It's in Italian because I couldn't find a good one in English but you'll get the gist of you watch it.

Because it was made by cooking with the pot over a fire. Its also where pho comes from because the French colonized vietnam and shared their recipes and gifted them the Catholic faith. In case you have any vietnamese friends, they are most likely Catholic because of the French.
