I really like the idea that the pink cephalopods are responsible for the leadership of the Candy Kingdom, kinda reminds me of that bit in Avatar where the dragons taught humans how to use fire magic and are both a sacred creature and part of the origin myth of the society. You could even take it further by having some of them kept in lavishly furnished and luxurious saltwater ponds in the palace, and they sit on some royal meetings or something funny like that. Caligula had horses as imperial advisors, so there is some precedent...
I don't see anything wrong with some mentions of proto-lunaitos. Anything usually comes from something, right? Proto-deadbeats are getting a small mention in our creation myth...
For formatting, honestly I wouldn't feel too much pressure to make it anything fancy, but I've found having a big main lore entry with a mix of shorter, more digestible articles, and hyperlinks to longer more elaborate entries, all organized in categories you navigate with a table of contents, tends to be easiest to work with and read through; this way the big walls of text are suggested instead of being dumped on you all at once. Liberal use of markdown formatting, cute symbols (there's a unicode character for the moon in various phases) and images is also good.
