A tandoor is a hole in the ground covered and used as an oven. Meat is put on hooked skewers and allowed to hang off the lid over the embers. More advanced tandoors are large round urns, made of a thick layer of earth or steel, which function the same but can be partially buried or left above ground. These larger tandoors can often be seen with dozens of flatbreads or bread rolls slapped to the inside surface to bake. It's basic but very effective.
