It includes planning stuff with her managers, preparing for sponsorships, working on future stream stuff, checking out stuff to ask for permissions for, preparing stuff for announcements, recording stuff, giving her feedback on the way tracks sound, etc.
Also we know that Gura gets nervous when she's streaming for a huge amount of people, and she's always worried about not being entertaining enough. She made that pretty clear even just yesterday when she mentioned the chatting to members, or in the shrimp shrine building stream when she literally said that she gets nervous still.
None of this doesn't mean she doesn't love us or doesn't like spending time with us, it means she needs some time to completely disconnect from Hololive and the Internet's focus on her in general to relax. This is an anxious girl we're talking about.
If everything she's said so far doesn't convince you she loves you then you're too far gone.
Though with all that being said, I still think she should've tweeted that she was going to be busy last week and wouldn't stream much.
